It’s the best time of the year again… Christmas time! I thought for Christmas I would bake some yummy chocolate chip muffins! I was inspired to make these muffins by the cutest cupcake kit I found at Marshalls. When I saw this kit I knew I had to buy it! The kit comes with polka dot and stripe cupcake holders. It also comes with the cutest Santa Claus, reindeer, stars, and Christmas tree toppers! Oh and let’s not forget about the packaging… too cute.
Instead of making cupcakes with it I made some delicious chocolate chip muffins. Of course If you like you could also do cupcakes. I think having vanilla icing on cupcakes would make it look like snow under the toppers which is real cute! I just thought muffins matched the little cupcake holders. For my muffins I used a simple Betty Crocker chocolate chip muffin mix because I am focusing more on the decorations. I followed the directions on the back of the box by adding 3/4 cup water, 1/4 cup vegetable oil (make sure you don’t do 1 1/4 cup which I almost accidentally did… oops haha), and 2 eggs. Then stir until it’s smooth, pour them in the tray, and then just put them in the oven at 400 degrees Fahrenheit for about 15-20 minutes. Watch them so they don’t burn! Let them cool down and pop on the cute toppers! Super easy, fast, and cute! I decided to put a glass of milk on the side with a cute tiny candy cane hanging from the cup. I also added some wire lights around the muffins. I think it makes it look like the Santa and reindeer are dancing haha. I’m obsessed with fairy lights, they make everything look extra cute! Hey everyone! I’m so happy to say that this is my fist post! yay! I decided to begin my blog with a quick and really easy treat that is perfect for this time of year. Simple red velvet cupcakes with cream cheese icing…yum! Since this time I am using a pre-made cake mix it will be super quick to make and this way you can focus more on decorating! Let’s get started!
To get started were going to need our ingredients! I decided to go for the Duncan Hines cake mix this time. You will need vegetable oil, water, and eggs to add to your cake mix. For decorating I chose Betty Crocker cream cheese icing because I think cream cheese goes great with red velvet. Also for decorating I will be using a few Hershey’s chocolate, a little powdered sugar, and some tree leaves for a cute winter design!
I began by putting the cake mix in a bowl. Then as it says on the back of the box, you just add 1 cup of water, 1/3 cup vegetable oil, and 3 eggs and then just mix it all together until it is smooth. Don’t forget to pre-heat the oven to 350 degrees Fahrenheit. Once everything is mixed put your cupcake baking cups in the cupcake tray, pour in the mixture, and let it bake for about 16-19 minutes. Also a quick tip to make sure it has completely baked is to poke your cupcake with a toothpick (I like to use a chop stick). If you take your toothpick out and see a lot of the cake stuck to it then just put your cupcakes back in for a couple more minutes. When they are all done take it out and let it cool so that you can start decorating!
After letting the cupcakes cool, it is now time to decorate! You can decorate however you like or you can achieve the design I did by using the icing tip pictured on the right and just moving your hand up and down. This way I think it will give the icing a little snowy effect. I then placed my cupcakes in a tray and put tree leaves all around them. I grated some Hershey’s chocolate all over the cupcakes and placed some pieces of chocolate on the leaves. Last but not least I sprinkled some powdered sugar on the leaves as snow for the perfect winter cupcakes!
